📝 About this coffee

This anaerobic natural lot comes from the volcanic highlands of Kayumas, in East Java. The region offers warm and humid conditions, ideal for slow, even cherry maturation.

The anaerobic process begins by fermenting ripe red cherries in sealed barrels for 72 hours. This oxygen-free environment intensifies fruity flavours. The cherries are then dried on patios for 14 to 21 days until they reach a moisture level of 12.5 to 13%.

The result is a lively and balanced cup with distinct notes of red fruits and orange peel.
