About this coffee

São Francisco de Assis is part of Fazenda Jaguara, a 90-hectare estate located in the Campo das Vertentes region, once famed for gold and now known for exceptional coffee. The story began in 2001, when agronomist Antonio Wander and two colleagues planted their first coffee trees. In 2013, his son André Luiz and partner Natalia Moreira took over, bringing a vision of sustainability and innovation to the farm.

Over the past six years, the farm has reduced agrochemical use by 80%, thanks to a holistic approach: planting naturally pest-resistant varieties like Arara, enriching biodiversity, using organic fertilisers, and introducing native bees as natural indicators of a healthy environment.

This Arara lot underwent a carefully controlled anaerobic fermentation, followed by a slow drying and resting period to enhance flavour clarity and balance. The cup reveals bright notes of strawberry and pineapple, with a smooth honeyed sweetness.
