About this coffee

This coffee is decaffeinated by Descamex using the Mountain Water process — a gentle, solvent-free method that relies only on water. The green beans are first steamed to extract caffeine and soluble aromatic compounds. These compounds are then reinfused into the next lots, preserving the coffee’s flavour complexity while reducing caffeine content to just 0.01–0.02%.

Sourced from the mountainous Chiapas region, on the border with Guatemala, this coffee represents a land rich in traditions and indigenous communities. Grown between 1,300 and 1,700 metres, the terroir is ideal for diverse agriculture, where coffee grows alongside cacao, sugarcane, fruits, and honey.

In the cup, Sueño Decaf is smooth and balanced, with notes of panela and almond, layered with dried fruits and a hint of citrus brightness. A decaf that combines natural processing with true flavour.
