About this coffee

This lot comes from a small, family-run farm in Buenos Aires, Dipilto, in the Nueva Segovia region of northern Nicaragua. The farm has been in the same family for over 50 years, and today spans 4.3 hectares, with a strong focus on ecological practices, water conservation and biodiversity preservation through natural shade trees.

The Red Catuai cherries are harvested fully ripe, floated and left to rest for 24 hours in plastic bags, before undergoing 96 hours of anaerobic fermentation in sealed tanks at Beneficio Cafetos de Segovia. Both temperature and pH are closely monitored throughout the process.

Drying is done on patios under natural sun, creating a profile that is both intense and balanced, with deep notes of ripe fruit and a touch of liquorice on the finish.

A rich, flavour-forward cup — perfect for those who enjoy depth and fermentation.
